MATERIALS
1 kilo of cherry tomatoes
½ kilo of sugar
A few drops of liquid vanilla
2 cinnamon sticks
5-6 cloves
2-3 burdock leaves
2 lemons (the juice)
IMPLEMENTATION
Wash the cherry tomatoes well and remove the part where the stem was. With a small knife, lightly score the skin on one side of each tomato.
We put them in hot water for a few minutes so that the skin softens and can be easily removed. After peeling them, place them in a container and pour over them with the juice of the lemons. We let them stand for a few hours so that they firm up and become fragrant.
Then we carefully drain them and transfer them to a pot. Add the sugar, vanilla, cinnamon sticks, cloves, burdock root and water.
Put the saucepan on medium heat and stir until the sugar melts. As soon as the mixture starts to boil, lower the heat and let the dessert simmer until the syrup sets and the tomatoes are glossy, stirring occasionally.
Remove from the heat, remove the cinnamon sticks, cloves and allspice and allow the dessert to cool completely before transferring it to sterilized jars. Served on its own or as an accompaniment to yogurt and ice cream.
