You will need:
1 large avocado pitted and diced
3 hard-boiled eggs chopped
2 tbsp mayonnaise
1 tbsp cilantro chopped (Shadon Beni)
1 tsp lemon juice salt lemon pepper
Method:
Add avocado, boiled eggs, mayo, lemon juice, cilantro, salt, and lemon pepper to a bowl and stir to combine. Serve with crackers or on a sandwich.
There are many variations you can make to this recipe by simply adding more of the things you like.You can add corn, cucumbers or even sweet pepper. If you want to eat this as a dish on its own you can add some grilled meat or even tuna for a more filling meal.
