The truth is that if you want to set up a menu with local products, you have to be willing to experiment!
For a month
THE Panagiotis Andreadisa shipbuilder by profession, had both appetite and great ideas. The best? A pop-up canteen in Tinos for a good cause: supporting the island’s healthcare. The canteen will be set up at sunset on July 18 at Cardiani and by the sunset of August 18th, he aspires to make enough money to cover all the island’s residents for air freight but also to be bought ultrasound machine for the health center. As is known, Tinos today only has primary carewith the weather standing – especially in winter – as an obstacle to transporting patients to the mainland.
These problems are known to the locals and the…almost locals, like Panagiotis, who first got to know Tinos in ’99, at the age of 13, when “my parents bought a house and a field in Ysternion Bay, in the middle of nowhere then”. He, however, of course loved the island – how could it be otherwise – and has not left it any summer since. Father of two daughters now, who have also found their little homeland in Tinos, he wanted to give something back. Vehicle, cooking. “What else? The truth is, I love cooking and I’m a third generation male cook who cooks mostly at home every day.” says to “K”. “For some strange reason, don’t ask how and why, I always wanted to work in a high intensity kitchen environment. Preparation
July is not that far away. Already the team is under steam. “At Easter, even my daughters cleaned artichokes!” he says himself. “They had to be cleaned and put in the oil so they would be ready when we needed them.” On their side they have the municipality of the island, a multitude of sponsors who have contributed both in money and in kind, artists who donated their designs to create merchandise, volunteers who will be at the point every sunset to serve the people, and above all producers of the island who embraced the effort.
“We won’t save the health of Tinos, we know that, but the point is to make a buzz, to make the issue heard, awareness is more important than money.”
