For those who miss these flavors, the Lithuanian shopping chain “Maxima” in a press release invites you to try a couple of recipes suitable for inexpensive and light meals or snacks at home, the highlight of which is none other than red-faced tomatoes.
Enjoy tomatoes even before bed
Tomatoes are appreciated by many not only for their versatility, but also for their abundance of useful properties. Edvardas Grišinas, a functional nutrition partner of the trade network, doctor and nutritionist Edvardas Grišinas, shares that due to the vitamins and substances valuable for human health contained in this vegetable, tomatoes are an ideal choice for a meal not only in the first but also in the second half of the day.
“You should always choose lighter products before bed, and tomatoes are a great option for this – they are fresh, have a lot of water and do not complicate digestion. Tomatoes are also useful because they are rich in the antioxidant lycopene, which is associated with the prevention of cardiovascular diseases, as well as vitamin C, which strengthens the immune system,” shares E. Grišinas.
The nutritionist doctor also shares a few examples of how inexpensive tomatoes with twigs can be used even for meals or snacks that are perfect for the evening. These combinations are recipes that do not require a lot of time and are rich in flavors and colors.
Skewers inspired by caprese salad
This snack is recommended by E. Grišinas due to its high protein combination, which will help to satisfy hunger and not burden the stomach. And for even more benefits, the nutritionist suggests adding fiber-rich melon to the traditional ingredients. To make skewers you will need:
- 500 g of tomatoes with twigs;
- 250 g of mozzarella cheese;
- 400 g of melon;
- 60 ml of olive oil;
- 30 ml of balsamic vinegar;
- fresh basil;
- salt, pepper (to taste).
Manufacturing. Cut the tomatoes and melon into 2-3 cm cubes. Mozzarella – in slightly smaller pieces, 1-2 cm, or you can choose mozzarella balls. String them alternately on skewers and, after lightly drying them with a paper towel, place them in a spacious serving dish. In a separate bowl, mix the olive oil, balsamic vinegar, salt and pepper. Pour the sauce evenly on the skewers, sprinkle with finely chopped fresh basil.
Tomato gazpacho
Another great dish is tomato gazpacho. According to E. Grišinas, such a soup is a great way to replenish the amount of fluids in the body and get potassium and vitamin C. To make this inexpensive dish, you will need:
- 600 g of tomatoes with twigs;
- 500 ml of tomato puree;
- 1 red onion;
- 2 cloves of garlic;
- 1 sweet red pepper;
- 300 ml of vegetable broth;
- 1 slice of baguette;
- 5 years sh. olive oil;
- 4 years sh. wine vinegar;
- 1st century sh. hot pepper sauce;
- 1st century sh. sugar;
- salt, pepper (to taste);
- fresh basil (for serving).
Manufacturing. Peel the tomatoes, clean the pepper and cut it. Chop the onion, crush the garlic cloves. Together with the torn baguette, put everything in a blender and grind until finely chopped, but not completely smooth. After pouring it into a large bowl, mix the tomato puree, chilled stock, olive oil, vinegar, tabasco sauce, sugar and spices.
Mix well, cover and refrigerate for at least a couple of hours, even better – for a whole day. When serving, add a few drops of olive oil and sprinkle with finely chopped basil. Delicious!
