MATERIALS
1 ½ fl. fava (louvana) Natural Life
4 fl. water

1 ½ fl. fava beans (louvanas) cut Natural Life

¼ cup olive oil + 2 spoons in the batter
½ cup dry onion coarsely chopped
1 clove of garlic, coarsely chopped
2/3 fl. coarsely chopped carrot
1/3 fl. dry white wine
1 teaspoon of salt
1 pinch of black pepper
1 vegetable stock cube
1 bay leaf
2 spoons of apple cider vinegar
For the overlay
2 small red onions cut into slices
3-4 spoons of capers

IMPLEMENTATION
Pour the olive oil into a saucepan and saute the onion for 1 minute. Add the garlic, carrot and mix. Add the fava beans and stir for 1 minute. Pour in the wine and let the water evaporate. Add salt, black pepper, vegetable stock and bay leaf.
Pour in the water and boil until it boils. Lower the heat and skim. Boil until the water evaporates and the fava beans are mushy, about 25-30 minutes. Remove the bay leaf and grind the fava beans. Add the apple cider vinegar, the 2 spoons of olive oil and grind well.
If necessary, add additional water. Place the fava beans on a plate and garnish with the onions, chives and olive oil.
