According to Consumer Power Magazine, the wire It is a Mexican dish whose origin comes from techniques used in Middle Eastern cuisine, particularly with the shish kebab from Türkiye.
In the beginning it was prepared by stringing pieces of meat and vegetables on metal rods, which prevented the fat from falling directly into the fire.
But with the passage of time, its preparation technique was adapted in countries like Mexico, where ingredients such as onion, peppers and cheese were added.
Although it was originally cooked on a skewer, today it is common to make wire in the pan or grill, which even avoids excessive oil consumption.
According to Larousse Cocina, in our country, this dish is cooked with various recipes: in coastal areas they include shrimp and other seafood; in the north goat wire is common; and in the south it is usually made with beef, chicken or pork.
