Javon Cummins dares you to taste Barbados differently as Barbados Food and Rum Festival

Would you recognise pudding and souse if it arrived without the familiar Saturday plate? Javon Cummins is willing to test you.

His version begins with braised pork belly and a steamed pudding of beetroot and sweet potato. Mango and Scotch bonnet become a jewel bright gel. That unmistakable pickle appears in new guises, including a delicate foam and jelly. The plate may look as though it belongs in a gallery, but the first mouthful should take a Barbadian straight to Saturday afternoon, to family, and to the person whose souse is declared better than everybody else’s.

That is the quiet dare at the heart of Cummins’ cooking. Look again. Taste closely. See whether memory can recognise itself in a new form.

“Modernisation should never erase memory,” he says. “If anything, it should give us another way to experience it.”

Long before the professional kitchen, Cummins could draw. He sketched, painted and made things with his hands, so visual expression was already a natural language. Food simply offered him another canvas. Ingredients became colour and shape. Sauces supplied movement. Texture added dimension. Even a garnish had to earn its place in the composition.

“I want you to look at the plate and be intrigued before you taste it,” he says. “Then, when you finally do, I want the flavour to complete the picture.”

Pretty food can be easy to admire and just as easy to forget. Cummins is after something deeper. His plates are designed to hold a sense of place, with enough flavour beneath the beauty to make the image matter. Fourteen years in kitchens have taught him that technique is not the same as maturity. A chef may know how to transform almost anything. Wisdom lies in deciding what should remain untouched.

That judgement has sharpened with time. Early in his career, Cummins sometimes wondered whether diners would understand his instinct to take something familiar and ask how else it might be expressed. Experience has made him more confident, and more restrained. Interesting ideas do not automatically belong on a plate. Tradition does not have to be frozen in place to be respected.

The proof often arrives in a diner’s face before it reaches their words.

At an overseas food festival, Cummins served his interpretation of cou cou and fish to a Barbadian woman who had not been home for a long time. The dish paired creamy cou cou with fire roasted fish and a Creole sauce deepened with smoked herring. One taste changed her expression. Soon she was speaking about Barbados, her grandmother’s cooking and the flavours she had missed. She returned throughout the festival to taste what else he had prepared.

“For those few minutes, she wasn’t just standing at a food festival overseas anymore,” he recalls. “She was back in her grandmother’s kitchen.”

Such a reaction says more than a compliment ever could. Caribbean food can travel, evolve and appear in an unexpected form while still carrying home inside it. Cummins wants that recognition to arrive first, followed quickly by curiosity.

This year, the curiosity comes with a spoon.

At the Barbados Food and Rum Festival’s Liquid Gold Feast, the chef best known for savoury cuisine will reveal another side of his repertoire. Cummins is turning to dessert, drawing on a pastry background that has long been part of his culinary life. His mystery ingredients, soursop and cinnamon, give him two distinct routes into Bajan memory.

Soursop begins with the creamy comfort of the drink many Barbadians know well. Cummins plans to take that familiarity somewhere lighter and more playful, introducing changes in texture, bright citrus and possible echoes of Bajan sweet bread. Richness will meet little flashes of acidity. Softness will find something with crunch. The exact arrangement remains his secret, which is precisely the point.

Cinnamon opens a warmer path, fragrant with possibilities. Nutmeg and ginger may enter the conversation, while black pepper threatens a small, delicious surprise. Pastry gives Cummins control over temperature, shape, texture and even the order in which flavour unfolds. The dessert should stop guests for a moment when they see it, greet them with an aroma they know, then refuse to taste quite as expected.

“That tension between ‘I know this flavour’ and ‘I’ve never had it quite like this’ is where I love to create,” he says.

Liquid Gold Feast takes place on Sunday 8 November 2026 at CARIFESTA House, Waterford, during a festival held from 5 to 8 November 2026 as Barbados marks the 60th anniversary of Independence. Under the theme These Fields and Hills, the feast places Barbadian ingredients and the people who transform them at the centre of the experience. Tickets for Liquid Gold Feast are BBD $350, while the combination ticket for Rise and Rum and Liquid Gold Feast is BBD $500.

Cummins’ desserts fit naturally into that story. Soursop, cinnamon, citrus and spice become more than ingredients. They are clues to an island that takes its food seriously, argues cheerfully over who makes the best fish cakes or pudding and souse, and understands that a proper Sunday lunch can carry the weight of family history.

His ambition for the evening is not simply to hear that a dessert was excellent. He would rather a guest look up from the plate and say, “I understand what you were trying to tell me.”

The message is that Barbadian cuisine has roots strong enough to support invention. Nostalgia and progression can share the same plate. A familiar flavour can be painted in new colours and still speak in a Bajan voice.

So here is the challenge. Come to Liquid Gold Feast, find Javon Cummins and pause before that first bite. Take in the shape, the fragrance and the small visual clues. Then taste the soursop or follow the cinnamon into its warmer corners. Does it remind you of something you drank, baked or loved years ago? Does it show you a Barbados you have never tasted before?

Tell him whether you understood the story. Just do not expect him to reveal the ending before dessert.
